So we’re sitting in a Taiwanese cafe, a popular spot with – not quite ladies who lunch but – younger maidens who like sweet stuff. Dazzling has just opened its first Singapore outlet (at Capitol Piazza), one of many to be rolled out to capture that giggling market.

This particular one is special, which to Parched means: it has a fully functioning cocktail bar with a good craft bartender working it. It’s also the first Dazzling to feature a bar. The drinks menu features a collection of 11 cocktails specially concocted by their in-house mixo Mr Eric Chen (陳宥均). 

The Singapore-exclusive cocktails are divided into different categories:, Light and Refreshing drinks that incorporates apple, mint and lime for a zesty kick; Rich and Creamy, blends with cream-based alcohol plus chocolates and Baileys.

Tiramisu cocktail

A good one to kick off, like a liquid cake that you don’t have to share. Did we mention, the prices here are, let’s say dazzling, but we really mean happily affordable – cocktails start at S$14. Yup, every minute is happy hour. (An Old Fashioned is $15). 

Aviation Night cocktail

A classic Aviation is made with gin, maraschino liqueur, crème de violette, and lemon juice. No surprises here, but it doesn’t pair with the sweet stuff on offer, and it’s strong, so save it for, oh, when you kick it after lunch.

Taiwan Exclusive Cocktail, Snowy Rose

The highlight of the collection is the Snowy Rose, inspired by the idea of a perfect lady – classy, elegant and charming. You can have one, if you lean in that direction, but you’re gonna keen a stiff one after to balance the palette after. We recommend a Negroni.

Verdict: Okay, it doesn’t feel like a bar – yes we get that it’s a cafe primarily – but if you’ve wandered into this part of town, there isn’t a bar nearby with prices to compare/compete. We say pop-in when you’re a little light before payday. Your date at least will love your sweet gesture.
