07 Dec 2025 By

This Is Part 1 Of Our New Editorial Series Where We Circle The Globe to Learn About Famous Cocktails, From Its History To Evolution To Its Current Modern Interpretation. We’re Kicking Off The Series With The Best Party Ever Drink Ever – Margarita!

Chase The Cocktail: Part 1

Margarita: A Global Affair, From Border Cantina to Bespoke Bar

Some cocktails accompany a good time, and then there is the Margarita. A glorious collision of solar-powered, sharp, sweet and salty. It is a drink that doesn’t just attend the party—it is the party. It evokes sun-drenched beaches, late-night revelry, and that specific, electric feeling of a perfect summer evening. Yet, beneath its vibrant, fun-loving exterior lies a surprisingly sophisticated history and a trajectory of evolution that has cemented its place as one of the world’s most enduring and adaptable classics.

At its core, the Margarita is pure alchemy: tequila, lime, and an orange liqueur, all balanced and presented in a glass, often with a cheeky halo of salt. But like any true masterpiece, its story is as complex and layered as its flavour.

Chapter One: The Myth, The Daisy, and The Desert Bloom

The true origin of the Margarita is a delightfully tipsy mystery, a folklore cocktail with more origin stories than a Hollywood celebrity. Forget a simple birth certificate; this drink has multiple competing claims, each adding a layer of charming mystique.

The most widely accepted theory among cocktail historians traces the Margarita back not to a person, but to a cocktail category: the Daisy. The word “Margarita” is, after all, Spanish for “daisy.” Daisies were popular sours in the early 20th century, typically made with a base spirit, citrus juice, and a sweet liqueur. As tequila became more prevalent in the 1930s and 40s, especially in the US-Mexico border regions, it was only a matter of time before someone swapped the brandy or gin for agave. The result was the “Tequila Daisy.” A recipe for a drink called the Picador, with the same key ingredients (tequila, Cointreau, and lime), even appeared in the UK’s Café Royal Cocktail Book in 1937, predating many of the famous border-town legends.

Yet, it’s the human stories that truly flavour the history:

  • Marjorie King’s Allergy: The popular tale credits Carlos “Danny” Herrera, who supposedly invented the drink in the late 1930s at his Tijuana restaurant, Rancho La Gloria, for customer Marjorie King, a dancer reportedly allergic to all spirits except tequila.
  • The Dallas Socialite: Another often-cited story belongs to Dallas socialite Margaret Sames, who claims to have mixed up the concoction at her Acapulco vacation home in 1948. She served it to influential friends, including hotelier Tommy Hilton, who supposedly brought it back to the States.
  • The Juárez Mistake: Francisco “Pancho” Morales, a bartender in Ciudad Juárez, claimed in 1942 that he made the drink by accident when a patron asked for a ‘Magnolia,’ a cocktail whose recipe he couldn’t quite recall. He improvised with tequila, lime, and Cointreau and named it for the closest Spanish flower name he could think of: Margarita.

Regardless of whose glass it first touched, the Margarita truly gained global traction after the post-WWII boom. By the 1950s, the cocktail’s recipe was officially published in Esquire magazine. With the rise of tourism to Mexico and the popularisation of tequila, the drink rapidly became a beloved symbol of vibrant, carefree glamour.

Chapter Two: The Evolution of an Icon

The Margarita’s journey from a classic, ice-cold “up” or “on the rocks” sipper to the boundless forms we enjoy today is a testament to its supreme adaptability.

The Frozen Frontier (The 1970s)

The biggest game-changer was not a new ingredient, but a new piece of technology. In 1971, Dallas restaurateur Mariano Martinez, frustrated by his bartenders’ inability to make a consistently perfect frozen Margarita, modified a soft-serve ice cream machine. The Frozen Margarita Machine was born. This innovation wasn’t just a gimmick; it democratized the cocktail, turning it into a reliably slushy, high-volume party starter that exploded across the United States. It was the ultimate expression of Tex-Mex conviviality, solidifying the Margarita’s association with fun, sun, and fiesta.

The Purist’s Refinement (The Tommy’s Era)

While the frozen, often overly-sweetened Margarita conquered the masses, the craft cocktail movement demanded a return to purity. Enter Julio Bermejo and his legendary San Francisco establishment, Tommy’s Mexican Restaurant.

In the 1990s, Bermejo created the now-famous Tommy’s Margarita, a bold yet simple twist that stripped away the orange liqueur entirely. His recipe? 100% agave tequila, fresh lime juice, and agave nectar. This was a revolutionary move. By removing the triple sec, Bermejo put the focus squarely on the tequila itself, replacing the orange sweetness with the purer, complementary sweetness of the agave plant. The Tommy’s Margarita became an international standard for connoisseurs, elevating the drink from a sugary concoction to a serious, spirit-forward showcase.

Chapter Three: The Modern Interpretations

Today’s Margarita is a brilliant canvas for mixological creativity. In the world’s most sophisticated bars, the fundamental trio of tequila, lime, and liqueur remains, but the details have been refined, stretched, and reimagined. The modern Margarita is all about high-quality ingredients and pushing the boundaries of flavour without losing the drink’s essential character.

The Spectrum of Spice and Smoke

  • The Mezcal Margarita: Perhaps the most significant modern shift is the introduction of Mezcal. Swapping the tequila for its smoky cousin – an agave spirit traditionally cooked in earthen pits – adds a visceral, complex, and earthy dimension to the drink. It’s a sophisticated step away from the classic, demanding higher-quality accompanying ingredients to match its depth.
  • The Spicy Margarita: A global phenomenon, it’s the perfect blend of refreshment and fire. Infusions are key here: jalapeño, serrano, or even habanero, often muddled or infused into the tequila or a house-made syrup. A perfect spicy rim – sometimes a blend of salt, chilli powder, and sugar – delivers an initial savoury hit that beautifully prepares the palate for the lime and heat.

Refinement in Form and Function

  • Clarified Margaritas: The pinnacle of modern technique, these are Margaritas milk-washed or centrifuged to remove all cloudiness, resulting in a crystal-clear cocktail that looks deceptively simple. This process removes harsh edges, creating an incredibly smooth, silky mouthfeel and a lighter profile that allows the subtle notes of the agave spirit to shine. Served over a single, large ice cube, it is a statement of minimalist elegance.
  • Global Flavours: The Margarita’s core template is now a vehicle for ingredients from across the globe. You’ll find versions incorporating yuzu for an intensely aromatic citrus twist, hibiscus for a floral, tart depth and a vibrant hue, or even creamy, savoury additions like avocado or unexpected herbs like cilantro and basil.

The Ultimate Margarita

For the discerning traveller, the perfect Margarita is a moment of place – it should reflect the sophistication of its location and the quality of its craftsmanship.

The Golden Ratio (The Classic Refined):

60ml Tequila (Blanco or Reposado)

30ml Freshly Squeezed Lime Juice

20ml Orange Liqueur (Cointreau or Grand Marnier)

Method: Combine all ingredients in a shaker with a generous amount of ice. Shake vigorously until the shaker exterior is frosty.

Glassware: A chilled coupe or a rocks glass.

Garnish: A single, large, high-quality Maldon sea salt rim (optional, but highly recommended) and a delicate lime wheel.26 The key is quality: the best tequila, the freshest lime, and a premium liqueur.27

A Timeless Toast

From a simple “Tequila Daisy” at a dusty border cantina to a mezcal-laced, clarified masterpiece at a sleek Tokyo bar, the Margarita has not only survived but thrived. It’s a cultural touchstone that manages to be both universally accessible and endlessly innovative. It’s a drink that perfectly captures the spirit of travel: the allure of the classic, the thrill of discovery, and the pleasure of pure, unadulterated enjoyment. So, the next time the sun sets, and the craving hits, remember the Margarita’s rich journey. Choose your poison – classic, frozen, smoky, or spicy—and raise a glass to the cocktail that has truly earned its salt.

That is a fantastic request! Singapore, with its world-class cocktail scene, is the perfect place to explore the modern interpretations of the Margarita. You’re looking for sophistication, innovation, and a serious approach to agave spirits.

Where to Drink It:

Cat Bite Club: They treat agave with the respect it deserves. Their signature Cat Bite Margarita is the perfect example, featuring a blend of Codigo Tequila Blanco and smoky Mezcal, enhanced with Cointreau, a house-made fresh citrus blend, agave nectar, and a hint of sherry. This is a complex, layered, and perfectly balanced take on the classic.

Papi’s Tacos: This vibrant taqueria has earned an excellent reputation for its Margaritas, offering fun, innovative variations like Spicy Mango, Cinnamon Vanilla, and even Habanero. Great for a lively, casual atmosphere.
