
Flagship isn’t exactly the easiest bar to find, but once you’re there, there’s plenty of reasons to stay. The entrance is pretty low key – look for the door right next to Humpback. The speakeasy-style bar has been revamped, and by most accounts, improved from its previous iteration. Designed by Principal Bartender Jerrold Khoo, who also holds a degree in interior design, the new layout is much friendlier and more communal. The bar wants to be the “Home of the Old Fashioned”, with four stalwarts on the menu to select from or you could even design your own from any spirit at the bar.
But before you get all Weird Science-y and letting the creative juices flow though, it’s worth giving the carefully curated classics a go. The Wine Of The South (Michter’s Small Batch Bourbon, Mint, Black Tea Syrup, Peach Bitters) for example, I could drink all night. For fans of Glendronach 12 Year Old, the Sherry Cask Old Fashioned is flavourful but balanced.
Having the munchies? Try the buttermilk fried chicken. The cheese balls, with 4 different types of cheese, are also a no-brainer. But it’s a good idea to pair these with a draft Sapporo or wine if you want to fully appreciate your Old Fashioned. Food with heavy flavours like the Thai-inspired Pok Pok Chicken Wings might mask some of the more delicate notes in the cocktail. Probably best as an after dinner disgestif.
But then again, who’s to stop you from enjoying your evening the way you like? Flagship’s laidback vibe, classic rock playlist (also personally curated by Jerrold) and well-made drinks are all about having a good time. With over 200 whiskies, the possibilities are endless.
Tip: Old Fashioneds are 1-for-1 during Happy Hour (6-8pm, excluding Sundays). Oh and ask Jerrold about the ongoing whisky flights, where they introduce some lesser-known finds, first releases, limited editions, and whiskies from closed distilleries.
