‘A Taste of The City: Polaroids of Singapore’ From One-Ninety Bar Is a Cocktail Collection That Pays Clever Homage to Singapore’s Rich Cultural Tapestry – The Essence of SG60 In a Glass!
One-Ninety Bar (Four Seasons Hotel) debuts a new menu that celebrates Singapore’s rich cultural mosaic through innovative, locally inspired cocktails. The curated menu invites you on an immersive journey through the city-state’s rich cultural history, where 16 new handcrafted concoctions unfold stories of tradition and tropes.
Inspired by the Chinese, Malay, Indian, and other ethnic communities, the collection of cocktails by Head Bartender Sophia Kang and team showcases the city’s multicultural and diverse soul. From time-honoured recipes to the vibrant energy of local festivals, every drink captures the essence of the city’s heritage through innovation and creativity.
Of the many attempts by Singapore bartenders to create cocktail “homages” to our culture and traditions, most fall by the dumpster fire of history. It’s often too earnest and misguided and, let’s face it, overwrought. (Also, not tasty.)
This collection, however, hits all the right notes. The touch is gentle; the intent gracious. It’s a noteworthy menu, with each section having a few cocktails that will delight any palate, and at least one winning concoction. These are my highlights.

Patrón Silver Tequila, Siete Misterios Doba-Yej, Spiced Pineapple, Fresh Lime.
Chinese Heritage > Pot of Gold. Known in Hokkien as Ong Lai, the pineapple symbolises good fortune and blessings, weaving abundance into every celebration. In this cocktail, that spirit comes alive through bright citrus notes and a lingering aromatic finish, enhanced by the slightly woody, subtly smoky character of mezcal.

Hendrick’s Grand Cabaret Gin, Osmanthus, Mint, Fresh Lemon, Plum Bitters, Egg White.
Malay Heritage > Echoes of Batik is akin to a classic Gin Fizz, shaken to perfection with the right balance of tartness and sweetness, crowned with an edible rice paper printed in batik, a final flourish that ties its name to the artistry it honours.

Bacardi Carta Blanca Rum, Elderflower, Passion Fruit, Coconut, Cinnamon, Whey.
Indian Heritage > Yellow Dress is clarified milk punch with rum, elderflower, passion fruit, coconut, cinnamon and whey. This cocktail brings about a sensory experience, drawing on the ritual of devotion observed on the first full moon of the Tamil month of Thai.

Hennessy V.S.O.P Cognac, Smokey Monkey Shoulder, Campari, PX Sherry, Tawny 10-Year Port Wine.
Other > My favourite Pioneer’s Elixir is built on a base of blended malt whisky, cognac, and port wine. This drink embodies the city’s enduring legacy, with a bitter edge that represents the challenges and determination of modern Singapore.

Adding a unique artistic touch, Guests are invited not only to savour the drinks but also to experience the visual narrative that reflects the same craft, artistry and reverence for detail that define the cocktails.
In addition to the boozy selections, the new menu also introduces an updated array of non-alcoholic drinks crafted for a refreshing experience where flavour takes centre stage. To accompany the libations, a fresh selection of bar snacks offers bold, inventive flavours, providing a delightful counterpoint that complements the new cocktail collection.
