Singapore Finally Gets Its Own Barrel-Aged Beer With the Launch of Off Day’s Limited Run Bottling.

Oddly enough, these guys never seem to take an Off Day. Since their inception in January 2020, they’ve already created 19 different beers! Their latest innovation is an exciting one: Singapore’s first whisky barrel-aged beer, thanks to their friends at independent bottlers M&E Drinks. Local craft brewery Off Day Beer Company created two versions of the beer, Wax On and Wax Off (no points for guessing the movie reference), the latter being the unaged Belgian Tripel.

Going with a Belgian Tripel instead of the more common Imperial Stout turned out to be an exquisite choice. The malty-sweet pomme fruit and peppery spice flavour profile proved to be an elegant match with the 11YO Glen Moray (56.3% ABV) that the cask used to hold, taking on notes of creamy vanilla, Halvah-like nuttiness, ripe plums, and apricots.

Turns out, our hot sweaty tropical climate is good for something, allowing Off Day to employ Tropical Ageing, a process that speeds up ageing whilst reducing the risk of contamination and oxidation. Result: the beer only needed a month to develop all those delicious flavours.
