It’s always a treat when a new Dom Pérignon drops. I mean, it’s preeeetty rare. There have only been 40-odd releases from the prestige champagne maker in the last 100 years. And it’s even more special when said bubbly a P2 (Pléntitude 2). Dom Pérignon, a vintage-only champagne, is aged at least 7-9 years on lees; the Dom Pérignon Plénitude 2 Vintage 2004 spent twice that, almost 15 years, to reach its peak. And boy, what a peak, but more on that later.


Unlike many champagne houses, Dom Pérignon is a vintage-only champagne maker and Chef de Cave Vincent Chaperon ensures only vintages from the best years, with the best ageing potentials, see light of day. So a new vintage Dom Pérignon is always a cause for celebration. The Dom Pérignon Vintage 2004 Plénitude 2 benefitted from a winemaking year of remarkable ease and generosity, especially in sharp contrast with 2003’s dramatic frosts and a historic heat wave. 


The new release sparkles with a soft bouquet and a tactile fruit with a beautiful minerality and a wonderfully saline finish punctuated by roasted notes. The bubbly is supremely elegant, precise and deep with citrusy notes of pink grapefruit and blood oranges. What better way to celebrate the expressive champagne than with an exclusive pairing menu from two-Michelin-starred fine dining restaurant, Saint Pierre. The limited time menu by by chef-owner Emmanuel Stroobant includes a sublime Marron & Caviar, and the spectacular Pigeon & Black Nut, a unique dish which showcases both the European and Asian aspects of Chef Stroobant’s cooking style. This dish, paired with the Dom Pérignon Vintage 2003 Plénitude 2, is a tribute to chefs of the past 23 years in Asia.


Champagne lovers can experience Dom Pérignon’s elevation to a new summit of expression by the bottle when purchased via Crystal Wines at $738 per bottle or alongside an exclusively curated pairing menu by Saint Pierre at S$688++ per pax. The pairing menu is available from 21 to 31 December — reservations have to be made at least three days in advance.
