Too many cooks? Not when it’s the dynamic duo of Tryson Quek and awards-winning bartender Bannie Kang’s 6 hands dinner with Janice Wong at new dessert cocktail bar 50Fifty. The collaboration, which follows Kamil Foltan’s guest shift, is a limited edition 6-course cocktail pairing menu.

The bar, semi-hidden on the second floor of the Intercontinental Hotel Robertson Quay, is intimate but friendly. (The alfresco balcony looks out to lush green and water – ripe with potential.) We start light and fresh with Clean Water, a cocktail that somehow balances The Macallan Sherry Oak 12 with guava, osmanthus, sencha and verbena. It’s married beautifully with Quek’s Irish oysters topped with roe and a cucumber/kombu ‘frost’.

The Ugly Duckling (confit duck rillette, duck liver, maple) is an indulgent bite that will inspire its share of Instagram posts, I’m sure. The cocktail pairing takes its cues from its rich, sweet flavours: White Meat, a colada-esque punchy blend of Burgal Especial rum, pineapple, coconut and clarified cream.

And finally, dessert maestro Janice Wong shines with the deliciously boozy Drunken Island. Whisky creme anglaise (yum), ginger, sea salt caramel, chocolate and bergamot makes a decadent sweet ending. Bannie provides a heady finish in the form of Double Red, using The Macallan Double Cask 12 sweetened with strawberries and deepened with Amontillado sherry.
