Meet the most popular spirit you’ve never heard of

Are you serving the world’s most-consumed spirit at your events? If you’re planning affairs outside of China, chances are you may not be! Baijiu, China’s national spirit, is a versatile liquor, which makes it ideal for integrating into any cocktail menu. Also important to note: Baijiu contains more than 50 percent alcohol by volume, so having food at a reception where it’s being served is essential. Baijiu comes in four basic styles (named and classified by their aromatic profiles): rice aroma, light aroma, strong aroma and sauce aroma. 

Rice aroma: This baijiu has a floral, mild flavor and is smooth, due to its triple distillation. 

Light aroma: Made from a rice and sorghum blend, this baijiu has a fairly neutral aroma and is similar to some of the restrained aromas of sake. 

Strong aroma: This is the most widely consumed type of the spirit. Tasters will experience a spicy, fruity flavor that packs a serious aftertaste. 

Sauce aroma: This full-bodied variety has a sharp flavor that is associated with other aromas, such as bleu cheese and soy sauce.
