NEED TO KNOW: AMARO LUCANO
22 Aug 2022 By David Fuhrmann-Lim
Here’s How You Can Tame the Wild Herbaceous Flavours of Amaro Lucano.
Thanks to spirits distributor Proof & Company, Italian herbal liqueur Amaro Lucano is now easily available in Singapore (they have the exclusive distribution right).
Here’s your Amaro Lucano cheat sheet:
• It’s founded in 1984 by the Cavalier Pasquale Vena and passed down to the generations using a closely guarded heirloom recipe.
• The Amaro Lucano story began in Pisticci, at the end of the 1800s, in the small Lucanian town in the province of Matera, where Pasquale Vena, a confectioner with a passion for herbology set out to create the perfect liqueur.
• The multi-award-winning liqueur boasts a robust aromatic palate with over 30 herbs. It is downright herbaceous, with a nuanced balance of gentian bitterness and sweetness with fragrant pine, lavender, citrus notes, dried fruits and minty surprises.
• Starting 2022, Amaro Lucano is the official amaro sponsor of The World’s 50 Best Bars and Asia’s 50 Best Bars.
Proof & Co has recommended some recipes to work with this herbal digestif, while Parched has finally cracked it and created our own soon-to-be-classic cocktail (bottom of page).
Negroni Lucano
• 30ml Amaro Lucano
• 30ml Vermouth
• 30ml Gin
• 20ml Bitter
Build the cocktail on rice in a rock glass with the following ingredients. Garnish with an orange slice and a lemon zest to discard.
Lucano Cup
• 45ml Amaro Lucano
• 50ml Green Apple Juice
• 50ml Ginger Ale
Stir and strain on an ice chunk. Garnish with chocolate-covered dried pear.
A Lucanian in Manhattan
• 25ml Amaro Lucano
• 50ml Tequila Blanco
Zest of Lime
In a mixing glass filled with ice cubes, pour 25ml of Amaro Lucano and 50ml of tequila blanco, stir and pour into an ice cold coupe. Garnish with lime zest.
And here’s the Parched special:
Cherry Lucano
• 30ml cognac
• 30ml Amara Lucano
• 15ml Griotte Cherry liqueur (or any dry cherry liqueur)
• 15ml Maraschino cherry.
• 5ml fresh lemon juice
Rinse the coupe glass with a dash of fresh lemon juice. In a mixing glass filled with ice cubes, stir and pour into the ice cold glass. Garnish with a cherry.
Delizioso, as the Italians would say!
“Amaro liqueurs offer the modern bartender a delicious opportunity to introduce guests to a wonderful myriad of herbal, floral and fruit
flavours. The bold, medicinal profile of these traditional liqueurs means they are great to sip on, or to use as a base in a highball or spritz. Meanwhile, the complexity of amaro means they are great to use
as an accent in classic cocktails, and the wide range of flavours and aromas make it perfect for signature, original cocktails,” say Jason Williams of 28 Hong Kong Street.
Amaro Lucano is available at select venues in Singapore, including 28 Hong Kong Street, ART, Monti, Bar Milano, and Warehouse hotel. Known for its distinct flavour, it is best enjoyed neat, on the rocks or with the addition of orange peel. Individual bottles of Amaro Lucano (S$54/750ml) are available for purchase at EC Proof.com.
