DRINK HERE: FLORETTE

30 Oct 2023 By

You Get Elegant Cocktails in a Lush Modernist Setting: Florette Offers a Respite From The Orchard Bustle.

Florette, perched high above the busy streets, is named after the Roman goddess of flowers. The destination bar in Pan Pacific Orchard is a mix of contemporary cool and old-school charm — with lush greenery plus a breezy alfresco area (with cosy cabanas) to enjoy its champagne, craft cocktails, premium oysters and elevated tidbits. [Among its collection are Barons De Rothschild Brut Champagne NV and Louis Roederer Cristal 2002.]

The cocktail menu at Florette draws inspiration from the four natural environments within the hotel — Forest, Beach, Garden, and Cloud — and has a carefully curated selection of eight creative cocktails with four distinct themes: Root, Shoot, Flower and Fruit.

Let’s dive in, shall we?

File this under ‘Fruit’. Prickly Pear is a familiar yet exotic opening drink, a gin-based welcome with Pierre Ferrand 1840 Cognac, vanilla and lemon — topped with champagne to give it that party zest. We’re off to a good start.

Our agave salvation comes in the form of this, a complex and cheeky cocktail with layers of flavours.

Shoot offers an exploration of leaves, barks and stalks. This Birch Bark martini is to be cherished, its subtle umami flavours take centre stage without the distraction of gin’s botanicals. Irish sea moss and saline make it an intriguing cocktail, while Noilly Prat just works when used right.

Here’s a wicked take on the Boulevardier: Bergamot Petals packs a punch with Bulleit Bourbon, Campari, Cocchi vermouth and a distinct touch of neroli. Balance and brisk, it’s the perfect foil as you while away an afternoon in serenity. {The high ceilings afford the bar an elegant and elegiac vibe.]

The expansive bar allows you to watch the team at work, making cocktails that, I would add, are technique-forward without the fuss, flavourful without the coy extras and, at around $24 – $26++, you’re treated to ambience and artistry. Definitely worth the visit.

To celebrate Florette’s launch, guests can enjoy a variety of dining promotions. To accompany the drinks, five oysters from each selected category are also available at $38++. For post-work dinner and drinks with friends, GHA DISCOVERY members get to indulge in free-flow Champagne, available at $120++ for 2 hours, from 6pm – 8pm.
