She said the most dangerous two-words you can ever say to a bar-man with a full beard: “Surprise Me”

It’s a regular week night at Long Chim, (meaning “come and taste” in Thai) gorgeous Thai restaurant by Celebrity Chef David Thompson, designed to transport you to the (streets and markets of Bangkok, and we’ve just had some of the most delicious and spiciest dishes the menu has to offer.

As you can imagine, the table is by now, polarised. For some – mostly the non-Asian half – a light perspiration has formed around their upper lips, furrowed brows, and some frothy beer to wash away the pleasurable pain of spice would be welcome. The rest – the Asian half – want more fire.  

And that’s exactly what we got.   

Along comes bar-man Jay Gray (pictured above in the throes of making us his yet-to-be-named concoction) – or rather, bar-magician, as we now call him – because someone uttered the most dangerous two words you can ever say to a bar-man with a full beard, “Surprise Me,” she said

And surprise us, he did. 

The result is Port-based, and served ablazed. A treacle of fiery mulled wine, poured over burnt cinnamon and caramelized orange peel, in a teacup; unmistakably festive, and unapologetically aristocrat… And the taste is – the Captain of the table aptly describes “tastes like the memory-erasing stick in MenInBlack”.

Top-Notch.
